Alex and Regis Crepy, who run Blue Fig, in Abbeygate Street, Bury St Edmunds, to bring Amelie flatbread flair to Wyken Vineyards
The father and son duo behind a town tapas restaurant will bring their signature flatbread flair to a new residency at a vineyard.
Regis and Alex Crepy, who own Blue Fig, in Abbeygate Street, Bury St Edmunds, will open Amelie at The Pizza Barn, in Wyken Vineyards, on April 26.
The new venture is inspired by their Cambridge restaurant, Amelie, which they opened in 2018 to bring their signature freshly-baked flammekueche – a type of pizza-style flatbread – to the UK.
Regis has owned several fine dining restaurants in the region over the last 32 years including Maison Bleue, in Bury, The Great House, in Lavenham, and Mariners, in Ipswich.
Alex said: “I love visiting Wyken with my young family. It’s quintessentially English and countryside cool with plenty of space, award-winning wines, celebrated restaurant, farmers market, woodland walks and more - we’re thrilled to add a slice of je ne sais quoi with our French flammekueche.
“Cooking on an authentic wood-fired pizza oven will allow us to offer something different that will be really special for our customers – we can’t wait to welcome them.”
Flammekueche, sometimes known as tarte flambée, is the speciality dish of the Alsace region.
Dating back centuries, it was originally created by bakers as a means of testing the oven’s temperature for their bread with a thinly stretched piece of dough.
The residency will feature changing menus with options such as the classic bacon and onion with gruyere cheese, a vegetarian selection and seasonal ingredients grown at Wyken such as asparagus, wild garlic for pesto and venison sausage.
Sam Carlisle, owner of Wyken Vineyards said: “Amelie’s flammekuche is a perfect addition to Wyken - a fast fresh and delicious food using our much-loved pizza oven.
“In keeping with our focus on sustainability we’re delighted that the Crepys will also source the quality ingredients grown here on our estate.”
The Crepy’s run another Amelie branch – a café and bakeshop – at Ben’s Yard, in Ely.
Guests can find Amelie at The Pizza Barn at the al fresco dining spot by Wooster’s Bakery in the vineyard.
It will be open from 11am to 3pm on Fridays and Sundays, and 9am to 3pm on Saturdays.
