Emily, 13, a Hartismere School pupil at Eye, chose roast pork tenderloin with offal and apricot farce, sultana couscous, cumin pancetta and jus for her main course.

Dessert was a pineapple tart with mango and coconut cream.

Head judge Jim Norris said: “Emily wowed us with her complete focus, highly organised, calm approach to working in such a pressured environment, and at the same time she displayed real understanding of the techniques required to produce such food.

“I’ve worked with professionals who would have been delighted to have produced the results Emily did, and she really stood out.”

Emily said:”I really enjoyed cooking and I am looking forward to working with my mentor Alan, Paton, head chef at the Stoke by Nayland Hotel, for the national final.”

Emily will meet her rivals for the FutureChef title in London on March 14.
